At the helm
Benoît Deval settled in the region in 2001. He first worked at "Le Jardin des Remparts",
followed by "Le Charlemagne" and "L’Hermitage de Corton", before his arrival at
"Le Cheval Noir" with his wife in June 2015.
High-quality and seasonal produce inspire the chef in the creation
of his menus that tend to vary over the course of the year.
